Reverse S’mores Mocha

Developed by Morgan Eckroth, 2022 US Barista Champion 

The classic s’mores drink but in reverse: make it a white mocha. Invoke the sensation of a cozy campfire by pairing white chocolate flavor with milk, espresso, and the essence of graham cracker, then top it with a smokey marshmallow for a sweet and surprising treat. 

Makes one serving.   



  • 1 Tbsp Ghirardelli White Chocolate Flavored Sauce
  • 15 g Graham cracker, crushed into a fine powder
  • 20 g Ghirardelli White Chocolate Flavored Sweet Ground Powder
  • 1 fl. oz. Single shot espresso
  • 1 drop Graham cracker extract
  • 4 fl. oz. Milk of choice
  • One Large marshmallow


  • Very lightly coat rim of the glass with Ghirardelli White Chocolate Flavored Sauce.
  • Press coated rim into crushed graham cracker powder until it sticks.
  • Add Ghirardelli White Chocolate Flavored Sweet Ground Powder into glass.
  • Mix in the shot of espresso.
  • Steam milk with graham cracker extract and pour into glass.
  • Lightly torch the marshmallow, place on top and serve.
