The Caramel Apple

A sweet, salty, and fluffy coffee drink using Ghirardelli’s Sea Salt Caramel Sauce and an apple foam.

Ingredients
- 500 g Ghirardelli Dark Coating Wafers
- 60 g Dried green apple chips, roughly chopped
- 2 g Cinnamon
- 50 ml Ghirardelli Sea Salt Caramel Sauce
- 150 ml Clear apple juice, cold
- 1.8 g Foam Magic
- 60 ml Ghirardelli Caramel Sauce
- 250 ml Cold brew, dark roast
- Cinnamon Apple Bark shavings
- Ice as needed
Directions
- TO MAKE CINNAMON APPLE BARK : Line a 6 ½ x 9 ½ inch sheet pan with plastic, set aside. In a microwave safe bowl, microwave Ghirardelli Dark Coating Wafers in 15-30 second intervals, stirring between each interval until wafers are fully melted. Mix in chopped dried apple chips and cinnamon, stir to combine. Pour onto prepared sheet pan, chill in freezer for 20 minutes or until set. Break into small chunks or grate for small shavings.
- TO MAKE SEA SALT CARAMEL APPLE FOAM: Whisk together Ghirardelli Sea Salt Caramel Sauce, apple juice, and Foam Magic until fully dissolved. Add to a whipping siphon and double charge with N2O. Shake. Store in the fridge until ready to use.
- DRINK BUILD: In a glass, thoroughly mix the Ghirardelli Caramel Sauce and cold brew. Add ice, leaving space at the top. Pipe on a heavy layer of Sea Salt Caramel Apple Foam. Garnish with Cinnamon Apple Bark chunk or shavings. Serve cold.
