Ingredients
- 1 and 2/3 cups all-purpose flour
- 1/4 cup unsweetened 100% cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 3/4 cup packed light or dark brown sugar
- 1/4 cup granulated sugar
- 1 large egg, room temperature
- 2 teaspoons pure vanilla extract
- 2 tsp red food coloring (Less for potted gel food coloring)
- One (1) 10oz bag Peppermint Bark Mix-Ins
Directions
- Preheat your oven to 350°F. Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar on medium-high speed until light and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, and red food coloring until combined. Scrape down the sides and bottom of the bowl as needed.
- On low speed, slowly mix the dry ingredients into the wet ingredients until just combined. The dough will be thick. Fold in the peppermint bark mix ins. Chill for 1-2 hours.
- Scoop the dough, about 2 tablespoons of dough each, and place them on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges appear set. The centers will look soft.
- Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
