Christmas Brownie Truffles
Peppermint Flavored Melting Wafers 10 oz Bag
Easy
Ingredients
- 1 box Ghirardelli double chocolate brownie mix
- 1/4 cup water
- 1/3 cup vegetable oil
- 1 egg
- 2 cups (10 oz.) Ghirardelli peppermint flavored candy making wafers
- 2 cups (10 oz.) Ghirardelli milk chocolate flavored candy making wafers
- Gold sugar pearls
- Red food coloring (oil based)
Directions
- Mix brownies according to instructions and underbake by 5-8 minutes from the recommended time. The center of the pan should be just barely set.
- • Allow brownies to fully cool in the pan. Cut off the edges, then break into pieces and place in the bowl of a stand mixer fitted with a paddle attachment.
- Beat the brownie pieces at medium speed until they form into one ball, about 2 minutes.
- Portion the brownie truffles into tablespoon-size balls and set aside. To make squares, press into an 8x8” baking pan and flatten the top with the bottom of a measuring cup. Remove from the pan and cut into 1x1” squares.
- Place the wafers into microwave safe bowls and heat one bowl at a time for 30 second intervals at half power until fully melted.
- Dip each of the truffles into the melted wafers, alternating between flavors and shaking off excess coating into the bowl, then transfer to parchment paper. If using sugar pearls, sprinkle on top of some truffles while still warm. Cool at room temperature for 10-15 minutes, or until hard. For faster setting, place in refrigerator.
- Set aside about ¼ cup of both melted wafers, reserving a couple spoonfuls of peppermint to tint red. Transfer all three to piping bags.
- Once the dipped truffles are fully set, pipe decorations on top, alternating between flavors and colors. Ideas for decorations include stripes, swirls, snowflakes, and snowmen. Allow to fully set and then store in an airtight container.
