Dipped Strawberries

Ingredients

  • 20 Strawberries, fresh, medium
  • 16 oz Ghirardelli White Coating Wafers
  • 12 oz Ghirardelli Dark Coating Wafers
  • 20 Wooden skewers or lollipop sticks

Directions

  • PROCEDURE:
  • Skewer each strawberry and set aside.
  • Place white wafers in a double boiler, over medium heat.
  • Melt white wafers, stirring often. Do not exceed 48°C/118°F.
  • Remove from heat.
  • Holding strawberries by the skewer, dip them into the melted white wafers covering the strawberries 100%.
  • Place dipped strawberries on a lined sheet tray to set.
  • DECORATING:
  • Fill piping bag with melted white wafers.
  • Cut tip off of piping bag making 1/8” hole.
  • Holding each strawberry by the skewer, drizzle thin lines from end to end.
  • Allow to set.
