Around the year 1865, a worker at one of Domingo Ghirardelli’s factories discovers that by hanging a bag of ground cacao beans in a warm room, the cocoa butter drips off, leaving behind a residue that can be converted into ground chocolate. This technique, known as the Broma process, is now generally used in the manufacture of chocolate. This started Ghirardelli’s 148-year history in the world of chocolates.
